Hello does anyone have a simple method of making a rackable launcher other than a 870 or an expensive airsoft gun? tried my own racking system but im making it over complicated any advice would be apreciated. Thanks

By "rackable" you mean a grenade lancher that actually feeds rounds from the mag tube to the chamber and then ejects them?
If so, your best bet are those two options you already mentioned. I won't say you can't build your own mechanism. However, if you count the time and effort you'll have to spend to get it working properly, both options you mentioned will be a lot cheaper.
If you only want to have a moving bolt, you can simply connect with a rod to the SPAS grip. Here's an example how Pulseriflefan did it:

Im just looking to make the bolt move back and forth. Dont need it to load and eject shells. I just need it to move smoothly and be sturdy. That design looks good, I may incorporate some of the parts into my design. I tried a airsoft spring shotgun couldnt get it right to save my life. gun too wide, spas too small, same old story. Stripped the shotgun, using the receiver just for the look.

Does the G&P kit not have a sliding grip that opens the 'breech' to reveal a shell (which members normally rip out and replace with an accurate M40)?

Yep!

In the above diagram you just have to replace the aluminium bolt with a tube to get the same effect.
However, to get this more realistic, I'd place the grenade at the front face of the bolt.
Thus the grenade actually moves with the bolt.
